  • 1/4 cup finely chopped pistachios
  • 1/3 cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup pistachio paste or finely ground pistachios
  • 1/4 cup sour cream
  • 1 teaspoon vanilla extract
  • 2 tablespoons all-purpose flour
  • Green food coloring, optional for color enhancement
  • 2 cups fresh blackberries
  • 1/3 cup granulated sugar (for compote)
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1 cup mascarpone cheese
  • 1/2 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Combine graham cracker crumbs, chopped pistachios, melted butter, and sugar in a bowl. Press into the bottom of a springform pan and bake for 10 minutes. Let cool.
  2. Beat cream cheese and sugar until smooth, then add eggs one at a time. Mix in pistachio paste, sour cream, vanilla extract, flour, and optional food coloring until creamy. Pour over the cooled crust and bake for 45-50 minutes until slightly jiggly in the center. Cool completely before refrigerating.
  3. For the blackberry compote, combine blackberries, sugar, lemon juice, cornstarch mixed with water in a saucepan over medium heat until thickened.
  4. Whip mascarpone cheese with heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  5. Once chilled, remove from pan and layer with blackberry compote and mascarpone topping before slicing.
