- 1 1/2 cups graham cracker crumbs
- 1/4 cup finely chopped pistachios
- 1/3 cup unsalted butter, melted
- 2 tablespoons granulated sugar
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1/2 cup pistachio paste or finely ground pistachios
- 1/4 cup sour cream
- 1 teaspoon vanilla extract
- 2 tablespoons all-purpose flour
- Green food coloring, optional for color enhancement
- 2 cups fresh blackberries
- 1/3 cup granulated sugar (for compote)
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 2 tablespoons water
- 1 cup mascarpone cheese
- 1/2 cup heavy whipping cream
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Combine graham cracker crumbs, chopped pistachios, melted butter, and sugar in a bowl. Press into the bottom of a springform pan and bake for 10 minutes. Let cool.
- Beat cream cheese and sugar until smooth, then add eggs one at a time. Mix in pistachio paste, sour cream, vanilla extract, flour, and optional food coloring until creamy. Pour over the cooled crust and bake for 45-50 minutes until slightly jiggly in the center. Cool completely before refrigerating.
- For the blackberry compote, combine blackberries, sugar, lemon juice, cornstarch mixed with water in a saucepan over medium heat until thickened.
- Whip mascarpone cheese with heavy cream, powdered sugar, and vanilla extract until soft peaks form.
- Once chilled, remove from pan and layer with blackberry compote and mascarpone topping before slicing.
