Pina Colada Fruit Salad is a vibrant, tropical delight that brings the flavors of a classic pina colada to your table without any alcohol. This refreshing salad combines fresh fruits like pineapple, strawberries, and blueberries with a creamy coconut dressing, making it the perfect dish for summer gatherings, potlucks, or a light dessert.


Ingredients

  • 1/2 cup cream of coconut
  • 1/4 cup pineapple juice
  • 1 ripe pineapple (chopped)
  • 1 pound strawberries (sliced)
  • 4 mandarin oranges (peeled and sectioned)
  • 4 firm ripe bananas (sliced)
  • 9 oz. blueberries
  • 1 1/2 cups green grapes
  • 3/4 cup sweetened shredded coconut

Instructions

  1. In a medium bowl, whisk together the cream of coconut and pineapple juice until smooth. Set aside.
  2. In a large bowl, combine all chopped fruits except for bananas.
  3. Pour the cream of coconut mixture over the fruits and add shredded coconut. Gently toss until well coated.
  4. If preparing ahead, refrigerate the fruit and coconut mixture separately until serving time; add bananas just before serving.
