  • 4 large green tomatoes (diced)
  • 1 large sweet onion (diced)
  • 2 cups distilled white vinegar
  • 1 cup water
  • 1 cup white sugar
  • 1 tablespoon minced garlic
  • 1 teaspoon mustard seed
  • 1 teaspoon celery seed
  • 1/2 teaspoon seasoned pepper
  • 1 tablespoon kosher salt
  • 1/2 teaspoon red pepper flakes

Instructions

  1. Dice the green tomatoes and onion into bite-sized pieces.
  2. In a large pot, combine vinegar, water, sugar, garlic, mustard seed, celery seed, seasoned pepper, kosher salt, and red pepper flakes. Stir until the sugar dissolves.
  3. Bring the mixture to a boil over medium heat and simmer for about 5 minutes.
  4. Pack the diced vegetables into sterilized canning jars and pour the hot brine over them, leaving about ½ inch of headspace.
  5. Seal jars tightly and let them cool before refrigerating. Allow to marinate for at least 24 hours before serving.
