  • 2 teaspoons powdered gelatin
  • 3 tablespoons cold water
  • cup water
  • White food coloring
  • Pearl luster dust
  • Thin lychee slices
  • Fresh raspberries

Instructions

  1. Prepare the Raspberry Rose Core: Cook raspberries with sugar, rose water, lemon juice, and cornstarch until thickened. Cool before transferring to molds.
  2. Make the Lychee Elderflower Mousse: Bloom gelatin in cold water. Blend pureed lychee with elderflower syrup and other ingredients; fold in whipped cream.
  3. Assemble Domes: Pour half of the mousse into molds over the raspberry core; freeze until set.
  4. Prepare the Opal Glaze: Melt together sugar, condensed milk, and white chocolate; mix in gelatin and desired coloring.
