  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 1 large banana, mashed
  • 1/2 cup natural peanut butter
  • 1 egg
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1 cup almond milk
  • 3/4 cup mini chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, mix rolled oats, cinnamon, salt, and baking powder.
  3. In another bowl, combine mashed banana and peanut butter until smooth. Stir in egg, maple syrup, and vanilla.
  4. Pour the wet mixture into the dry ingredients and add almond milk. Fold in mini chocolate chips.
  5. Use a cookie scoop to fill each muffin cup evenly and top with extra chocolate chips if desired.
  6. Bake for about 25 minutes until set. Allow to cool before removing.
