  • 1 cup unsalted butter, room temperature (for frosting)
  • 34 cups powdered sugar, sifted
  • 34 tablespoons peach puree
  • 12 tablespoons champagne or sparkling wine
  • Pinch of salt
  • Fresh peach slices
  • Candied peach or cherry (optional)
  • Sparkling sugar or granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin pan with cupcake liners.
  2. Whisk together flour, baking powder, and salt in one bowl; set aside.
  3. In another bowl, cream together butter and sugar until fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Combine champagne, milk, vanilla extract, and peach puree in a separate bowl.
  6. Alternately add dry ingredients and wet mixture to the creamed butter mixture until just combined.
  7. Fill cupcake liners two-thirds full and bake for 18–20 minutes or until a toothpick comes out clean.
  8. Let cool completely before frosting with peach buttercream.
