- 1/2 teaspoon baking powder

- 2/3 cup unsalted butter (cold and cubed)
- 2/3 cup packed light brown sugar
- 1 large egg
- 1 teaspoon pure vanilla extract
- 3 1/2 cups fresh peaches (peeled and chopped)
- 1/4 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon freshly squeezed lemon juice
Instructions
- Preheat your oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
- In a large bowl, whisk together the flour, baking powder, and salt. Cut in the cold butter until crumbly.
- In another bowl, combine brown sugar, egg, and vanilla; then mix in the dry ingredients to form a crumbly dough.
- Press two-thirds of the dough into the bottom of the prepared pan for the crust.
- In a separate bowl, toss peaches with granulated sugar, cornstarch, and lemon juice. Spread over the crust and sprinkle remaining dough on top.
- Bake for 40 to 45 minutes until golden brown. Allow to cool before slicing.
