  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2/3 cup unsalted butter (cold and cubed)
  • 2/3 cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 3 1/2 cups fresh peaches (peeled and chopped)
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon freshly squeezed lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, and salt. Cut in the cold butter until crumbly.
  3. In another bowl, combine brown sugar, egg, and vanilla; then mix in the dry ingredients to form a crumbly dough.
  4. Press two-thirds of the dough into the bottom of the prepared pan for the crust.
  5. In a separate bowl, toss peaches with granulated sugar, cornstarch, and lemon juice. Spread over the crust and sprinkle remaining dough on top.
  6. Bake for 40 to 45 minutes until golden brown. Allow to cool before slicing.
