  • 12 oz spaghetti
  • 1 lb cremini mushrooms (sliced)
  • 4 tbsp unsalted butter
  • 2 tbsp olive oil
  • 2 medium shallots (chopped)
  • 46 cloves garlic (minced)
  • 2 cups low sodium chicken broth
  • 3/4 cup mascarpone cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley (for garnish)

Instructions

  1. Cook the spaghetti as per package directions in salted water; reserve 1 cup pasta water before draining.
  2. In a large skillet, melt 2 tbsp butter and 1 tbsp olive oil over medium heat. Sauté half the mushrooms until golden brown, then set aside. Repeat with remaining mushrooms.
  3. In the same skillet, melt another 2 tbsp butter. Add shallots and garlic; sauté until soft. Pour in chicken broth and whisk in cornstarch mixed with Dijon mustard and herbs; simmer until thickened.
  4. Stir in mascarpone and Parmesan until melted, then add cooked mushrooms back to the sauce.
  5. Combine drained pasta with sauce, adding reserved pasta water as needed for desired consistency. Garnish with parsley before serving.
