  • 1 lb Italian sausage (sweet or spicy)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 14.5 oz can diced tomatoes, drained
  • 2 quarts chicken stock
  • 1/2 cup heavy cream
  • 1 cup ditalini pasta
  • 1/2 cup freshly grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add Italian sausage and cook until browned. Remove and set aside.
  2. Sauté diced onion and minced garlic in the same pot until soft.
  3. Stir in drained tomatoes, chicken stock, basil, oregano, and return the sausage to the pot. Simmer for 10 minutes.
  4. Add ditalini pasta and cook until al dente (8–10 minutes).
  5. Reduce heat; stir in heavy cream and Parmesan cheese until melted.
  6. Season with salt and pepper, garnish with fresh parsley, and serve hot.
