  • 1 medium green bell pepper (diced)
  • 1 medium red bell pepper (diced)
  • 2 celery stalks (diced)
  • 3 cloves garlic (minced)
  • 1 ½ cups long-grain white rice
  • 2 teaspoons Cajun or Creole seasoning
  • 3 cups chicken broth
  • 1 pound shrimp (peeled and deveined)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sausage and cook until browned.
  2. Stir in onion, bell peppers, celery, and garlic; sauté until vegetables are tender (5–7 minutes).
  3. Add rice, Cajun seasoning, and stir to coat.
  4. Pour in chicken broth; bring to a gentle boil.
  5. Cover and simmer on low heat for about 25 minutes until the rice is cooked.
  6. Add shrimp during the last 5 minutes of cooking until they turn pink.
  7. Season with salt and pepper to taste before serving.
