  • 1 cup Swanson Chicken Broth
  • 1 cup jasmine rice
  • 46 boneless skinless chicken thighs
  • 1 tbsp ginger (minced)
  • 1 clove garlic (minced)
  • 1/2 cucumber (sliced)
  • 1/2 carrot (julienned)
  • 2 eggs (sunny side up)
  • Green onion oil

Instructions

  1. In a large frying pan, heat oil over medium heat and sauté minced ginger and garlic until fragrant. Add jasmine rice and fry until glossy.
  2. Pour in the chicken broth and place chicken thighs skin-side up in the pan. Bring to a boil, cover, reduce heat to low, and cook for 17 minutes. Let sit covered for another 10 minutes.
  3. Remove chicken, chop into bite-sized pieces, and set aside.
  4. For green onion oil, heat neutral oil in a small pot until it reaches 275°F and carefully pour it over sliced green onions in a heat-proof bowl.
  5. Fluff rice in serving bowls, top with chopped chicken, drizzle green onion oil, add vegetables, sambal oelek for spice, and finish with sunny-side-up eggs.
