Ingredients
- 1 tablespoon olive oil
- 2 cups bell peppers (green or red – cut into 1” cubes)
- 1 cup red onion (cut into 1” cubes)
- 4 cloves garlic (minced)
- 12 ounces andouille or Louisiana-style sausage links (sliced)
- 3 cups medium pasta shells
- 2 cups chicken broth
- 14.5 ounce can petite diced tomatoes
- 2 tablespoons Cajun seasoning
- 1 tablespoon hot sauce
Instructions
- Heat 1 tablespoon of olive oil in a large pot over medium-high heat.
- Add 2 cups of diced bell peppers, 1 cup of diced red onion, 4 minced garlic cloves, and sliced sausage (12 ounces) to the pot. Sauté for 4–5 minutes until vegetables are tender.
- Stir in 3 cups of medium pasta shells, 2 cups of chicken broth, 1 can (14.5 ounces) petite diced tomatoes, 2 tablespoons of Cajun seasoning, and 1 tablespoon of hot sauce.
- Bring to a boil, cover with a lid, reduce heat to low, and cook for 10 minutes.
