  • 1 lb boneless skinless chicken breasts
  • 1 1/2 Tbsp Cajun seasoning
  • 1 medium red bell pepper
  • 1 medium yellow bell pepper
  • 1 small red onion
  • 2 garlic cloves
  • 2 cans low-sodium chicken broth (14.5 oz each)
  • 1 can fire roasted diced tomatoes (14.5 oz)
  • 3/4 cup heavy cream
  • 12 oz penne pasta
  • 3/4 cup finely shredded parmesan cheese
  • 1 1/2 Tbsp olive oil (divided)
  • 2 tsp cornstarch (mixed with 1 Tbsp water)
  • 3 Tbsp minced fresh parsley
  • Salt and freshly ground black pepper (to taste)

Instructions

  1. Heat 1 Tbsp olive oil in a large pot over medium-high heat.
  2. Season chicken with Cajun seasoning and cook until browned, about 6 minutes total. Remove from pot and keep warm.
  3. In the same pot, sauté sliced bell peppers and onion for about 3 minutes, then add minced garlic and additional seasoning for another minute.
  4. Add chicken broth, tomatoes, and half the heavy cream; bring to a boil.
  5. Stir in penne pasta and cook until al dente, about 12-13 minutes.
  6. Add cornstarch mixture to thicken the sauce; cook for an additional minute.
  7. Remove from heat and stir in remaining cream, parmesan cheese, parsley, and cooked chicken. Season with salt and pepper before serving.
