  • 1 large egg
  • 2 tsp. vanilla
  • 1 1/2 cups grated zucchini
  • 1 1/2 cups semi-sweet chocolate chips (divided)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, whisk together oats, flour, cocoa powder, baking soda, salt, cinnamon, and brown sugar.
  3. In another bowl, combine melted butter, egg, and vanilla extract until smooth.
  4. Add the wet ingredients to the dry mixture along with grated zucchini and 1 cup of chocolate chips; stir until combined.
  5. Drop rounded tablespoonfuls of dough onto prepared baking sheets and flatten slightly. Top each cookie with extra chocolate chips.
  6. Bake for 12-15 minutes or until edges are lightly browned. Let cool on baking sheets for a few minutes before transferring to wire racks.
