Instructions

  1. In a large mixing bowl, combine warm water, sugar, and yeast. Let it sit until frothy (about 5 minutes).
  2. Add flour and salt to the mixture; knead until a smooth dough forms.
  3. Cover the bowl with a clean cloth and let it rise for 30–45 minutes until doubled in size.
  4. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  5. For the filling, mix mozzarella cubes with rosemary in a small bowl.
  6. Divide dough into eight portions and roll each into long ropes. Flatten slightly, add filling to the center, and fold over to seal.
  7. Boil water with baking soda; carefully dip each pretzel for about 30 seconds before placing on the baking sheet.
  8. Sprinkle grated Parmesan cheese on top and bake for 15–20 minutes until golden.
