  • 1 teaspoon ground cinnamon

  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon ground turmeric
  • 2 large sweet potatoes, peeled and diced
  • 4 cups vegetable broth
  • 1 (14-ounce) can diced tomatoes
  • 1 (14-ounce) can chickpeas, drained and rinsed
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté the diced onion until softened, about 5 minutes.
  2. Add minced garlic and spices (cumin, coriander, cinnamon, ginger, cayenne pepper, turmeric), stirring for 1–2 minutes until fragrant.
  3. Stir in the diced sweet potatoes to coat with spices; cook for an additional 2–3 minutes.
  4. Pour in vegetable broth and diced tomatoes with their juices. Bring to a simmer; cover and let cook for about 15–20 minutes until sweet potatoes are tender.
  5. Use an immersion blender to purée the soup until smooth; alternatively, blend in batches using a regular blender.
  6. Stir in chickpeas and season with salt and pepper. Heat through before serving.
  7. Garnish with fresh cilantro for added flavor and enjoy!
