  • 1 tsp baking powder

  • 2 large eggs
  • 1/2 cup buttermilk
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 1/2 tsp espresso powder (optional)
  • 1/4 cup hot water
  • 4 oz Andes mints (for filling and garnish)
  • 1/4 cup heavy whipping cream
  • 1/4 cup crushed chocolate wafers or chocolate sandwich cookies
  • 1 cup unsalted butter (room temperature)
  • 3 cups sifted powdered sugar
  • 56 tbsp heavy whipping cream
  • 34 drops green food coloring
  • 2 tsp peppermint extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a bowl, mix together the dry ingredients: flour, sugars, cocoa powders, baking powder, baking soda, and salt.
  3. Whisk together the wet ingredients: eggs, buttermilk, oil, vanilla extract, and hot water. Combine with the dry mixture until just mixed.
  4. Fill liners two-thirds full with batter and bake for 18-20 minutes until a toothpick comes out clean.
  5. Prepare the ganache by heating cream and pouring it over chopped Andes mints. Stir until smooth.
  6. Once cooled, core each cupcake and fill with ganache. Frost generously with mint chocolate frosting made from butter, powdered sugar, heavy cream, peppermint extract, and green food coloring.
