- 1/4 cup brown sugar
- 1 can sliced pineapples (drained)
- Maraschino cherries
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt

- 1 egg
- 1/2 cup milk
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- In a saucepan over medium heat, melt unsalted butter and stir in brown sugar until smooth. Pour this mixture into each muffin cup.
- Place one slice of pineapple and a cherry on top of the butter-sugar mixture in each cup.
- In a mixing bowl, cream together granulated sugar and the egg. Add milk and vanilla extract; mix well.
- In another bowl, whisk together flour, baking powder, and salt. Gradually combine with wet ingredients until just mixed.
- Spoon batter over the pineapple layers in the muffin cups.
- Bake for about 20 minutes or until a toothpick inserted comes out clean. Let cool slightly before removing from the pan.
