Ingredients
- 1/4 cup olive oil
- 2 Tbsp red wine vinegar
- 1 Tbsp lemon juice
- 1 cucumber
- 1 pint grape tomatoes
- 1/2 red onion
- 1/4 bunch fresh parsley
- 1 can cannellini beans
- 1 can chunk light tuna
- 2 oz. feta cheese
Instructions
- In a mixing bowl, whisk together olive oil, red wine vinegar, lemon juice, oregano, salt, and pepper to create the vinaigrette.
- Prepare vegetables: thinly slice the red onion (soak in ice water if desired), cut cucumber into quarter rounds, halve grape tomatoes, and chop parsley.
- In a large bowl, combine the cucumber, tomatoes, onion, and parsley; pour the vinaigrette over and stir gently.
- Rinse and drain beans and tuna; add them to the vegetable mixture along with feta cheese. Gently stir to combine.
- Serve immediately or refrigerate in an airtight container for up to four days.
