  • 1 lb green beans
  • 1 cup Kalamata olives
  • 16 oz jar roasted red peppers
  • Fresh dill or parsley
  • Dijon mustard
  • Olive oil
  • 1 Tbsp brined capers (roughly chopped)
  • 1/3 cup red wine vinegar
  • 1/3 cup extra virgin olive oil
  • 2 Tbsp dijon or whole grain mustard
  • 1 pinch red pepper flakes

Instructions

  1. Cook potatoes: Boil cubed Yukon gold potatoes in salted water for 10-15 minutes until tender. Drain and let steam dry.
  2. Blanch green beans: Boil trimmed green beans for about 5 minutes until bright green and al dente. Transfer to iced water and drain.
  3. Combine ingredients: In a large bowl, mix cooled potatoes and green beans with sliced roasted peppers, Kalamata olives, capers, and minced onion. Toss gently.
  4. Make dressing: Whisk together red wine vinegar, olive oil, Dijon mustard, and red pepper flakes; drizzle over the salad and mix well.
