  • 1 cup orzo pasta
  • 1 cup sliced mushrooms
  • 1/2 cup Marsala wine
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped

Instructions

  1. Season the chicken with salt and pepper. Heat olive oil in a large skillet over medium-high heat and cook the chicken until golden brown (5-7 minutes per side). Remove and set aside.
  2. In the same skillet, melt butter and sauté mushrooms for 4-5 minutes. Add minced garlic and thyme; cook for another minute.
  3. Deglaze the pan with Marsala wine, scraping any browned bits off the bottom. Simmer for 2-3 minutes.
  4. Add chicken broth and bring to a gentle simmer. Stir in orzo; cook for 8-10 minutes until al dente.
  5. Reduce heat; stir in heavy cream until smooth. Return chicken to skillet to warm through and adjust seasoning if needed.
  6. Garnish with chopped parsley before serving.
