  • 4 tablespoons cornstarch
  • 5 cloves garlic (minced)
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1 cup vegetable broth
  • 1 cup Cashew Cream (or other vegan cream)
  • 2 cups baby spinach (sliced)

Instructions

  1. Press the tofu for at least 15 minutes to remove excess moisture and cut into cubes.
  2. In a bowl, mix cornstarch, salt, and pepper. Toss the tofu cubes until coated evenly.
  3. Heat avocado oil in a skillet over medium heat; sauté minced garlic until fragrant.
  4. Add the coated tofu to the skillet; cook until golden brown on all sides (about 8-10 minutes).
  5. Stir in sun-dried tomatoes and spices; cook for an additional 2 minutes.
  6. Pour vegetable broth and stir in tomato paste; let simmer for about 5 minutes.
  7. Mix in cashew cream until smooth; add baby spinach and fresh basil, stirring until the spinach wilts.
