Ingredients
- 2 Tbsp unsalted butter
- 4 cloves garlic (minced)
- ½ tsp each salt, oregano, crushed red pepper flakes, smoked paprika
- ¼ tsp ground black pepper
- ½ cup sun-dried tomatoes (roughly chopped)
- ½ to 1 cup vegetable broth
- 2 15-oz cans butter beans (drained)
- 1 cup chopped fresh spinach
- 1 cup heavy cream
- ½ cup grated parmesan
- 2 Tbsp chopped fresh basil
Instructions
- In a large sauté pan, melt 2 Tbsp unsalted butter over medium heat.
- Add 4 minced garlic cloves, ½ tsp each of salt, oregano, crushed red pepper flakes, smoked paprika, and ¼ tsp ground black pepper. Cook until fragrant (about 2 minutes).
- Stir in ½ cup chopped sun-dried tomatoes and ½ to 1 cup vegetable broth.
- Add two drained cans of butter beans and cook on medium heat for about 5 minutes.
- Remove from heat and stir in 1 cup chopped fresh spinach until wilted.
- Add 1 cup heavy cream, ½ cup grated Parmesan cheese, and 2 Tbsp chopped fresh basil. Mix well and serve warm.
