Description

Marinated tomatoes are a vibrant and refreshing side dish that adds a burst of flavor to any meal. This quick and easy recipe features ripe tomatoes soaked in a tangy marinade of olive oil, vinegar, and fresh herbs, making them the perfect complement to grilled meats, pasta dishes, or even as a standalone salad.

Ingredients

Scale
  • 1 pound ripe tomatoes
  • ½ red onion
  • 1 garlic clove
  • ¼ cup olive oil
  • 2 tablespoons red apple vinegar (or balsamic vinegar)
  • ½ lemon juice
  • 1 teaspoon fresh basil
  • 1 teaspoon fresh parsley
  • Sea salt and freshly ground pepper to taste

Instructions

  1. Select fresh tomatoes from your local market. Slice cherry tomatoes in halves or quarters; cut larger varieties into ⅓-inch thick slices.
  2. In a mixing bowl, whisk together olive oil, vinegar, lemon juice, diced red onion, minced garlic, chopped basil, parsley, salt, and pepper until well combined.
  3. Pour the marinade evenly over the sliced tomatoes and gently toss to coat.
  4. Cover and refrigerate for at least two hours before serving for maximum flavor enhancement.
