  • 21/2 cups gluten-free old-fashioned oats
  • 1 cup milk (any kind)
  • 1/2 cup pumpkin puree
  • 1/2 cup pure maple syrup
  • 1/4 cup melted coconut oil
  • 1 egg
  • 2 tablespoons chia seeds

Instructions

  1. Preheat your oven to 350°F (175°C) and spray an 8×8" baking pan with nonstick spray.
  2. Blend 1 cup of oats in a food processor until they turn into flour.
  3. In a large bowl, whisk together milk, pumpkin puree, maple syrup, melted coconut oil, egg, and vanilla.
  4. Add remaining oats, oat flour, chia seeds, pumpkin pie spice, baking powder, baking soda, and salt to the wet mixture; stir until combined.
  5. Pour the batter into the prepared pan and bake for 35-40 minutes until edges are golden brown.
  6. Allow to cool completely before slicing.
