  • 1 teaspoon vanilla extract
  • 2½ teaspoons unflavored gelatin powder (7 grams)
  • ¼ cup cold water
  • 12 tablespoons butter (softened)
  • 1½ cups granulated sugar
  • 10 egg yolks
  • 1 cup mango puree (store bought or homemade)
  • ¼ teaspoon salt
  • 2 tablespoons fresh lemon juice
  • ½ cup raspberry jam

Instructions

  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine flour, powdered sugar, and salt. Add cold butter, mixing until crumbly. Stir in egg yolk, heavy cream, and vanilla extract until well combined. Press into a greased 9×13 inch baking pan and bake for 15 minutes until golden.
  2. For the filling, bloom gelatin in cold water for 5 minutes. Beat softened butter and sugar until creamy; add egg yolks one at a time, mixing well. Stir in mango puree, salt, lemon juice, and gently heat until combined but not boiling. Remove from heat and stir in dissolved gelatin.
  3. Pour the mango curd over the baked crust. Spoon raspberry jam on top and create swirls using a knife or skewer. Bake for an additional 20 minutes until set. Cool completely before slicing.
