  • 2 eggs, room temperature

Instructions

  1. Preheat your oven to 350°F and line a muffin tin with paper liners.
  2. Lightly mash the blueberries in a bowl.
  3. In one bowl, mix together flour, protein powder, brown sugar, baking soda, baking powder, salt, and mashed blueberries.
  4. In another bowl, whisk together softened butter, sourdough starter, vanilla extract, milk, and eggs.
  5. Gently fold the wet ingredients into the dry mixture until just combined.
  6. Spoon the batter into the muffin tin and optionally top with extra blueberries.
  7. Bake for 30 minutes or until a toothpick comes out clean after testing.
