Instructions
- In a large pot, heat vegetable oil over medium heat. Gradually stir in flour and cook until dark brown (20–30 minutes).
- Add onion, bell pepper, and celery; sauté for 5–7 minutes.
- Stir in garlic, Cajun seasoning, thyme, and bay leaf; cook for another minute.
