Instructions

  1. In a large pot, heat vegetable oil over medium heat. Gradually stir in flour and cook until dark brown (20–30 minutes).
  2. Add onion, bell pepper, and celery; sauté for 5–7 minutes.
  3. Stir in garlic, Cajun seasoning, thyme, and bay leaf; cook for another minute.
  4. Slowly add stock while stirring to prevent lumps; bring to a boil.
  5. Add sliced sausage; reduce heat and simmer for 20 minutes.
  6. Incorporate shrimp and crabmeat; simmer for an additional 10–15 minutes.
  7. Remove bay leaf, stir in green onions and parsley; season to taste.
