  • 4 large russet potatoes
  • 2 lbs steak (NY strip, ribeye, sirloin, or tenderloin)
  • 6 tablespoons butter
  • 1 1/2 cups heavy cream
  • 2/3 cup grated parmesan
  • 4 tablespoons olive oil
  • 2 teaspoons kosher salt
  • 2 tablespoons garlic, minced
  • 2 tablespoons cajun seasoning
  • 4 tablespoons avocado oil, divided
  • 2 tablespoons fresh parsley, minced
  • 2 wedges lemon, juice of
  • 1/21 teaspoon red pepper flakes
  • 1 teaspoon freshly cracked pepper

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking pan with parchment paper.
  2. Rub potatoes with olive oil and sprinkle with sea salt. Place on the baking pan and bake for 50–60 minutes until tender.
  3. In a cast iron skillet, heat avocado oil over medium-high heat. Season steak bites with salt and cajun seasoning; sear in batches until browned, about 3–4 minutes. Add garlic and butter during the last minute.
  4. In a saucepan, combine heavy cream and parmesan over medium heat until melted. Stir in lemon juice and red pepper flakes.
  5. Cut open each baked potato lengthwise, fluff the insides, stuff with steak bites, drizzle with cream sauce, and garnish as desired.
