  • 1 1/2 cups powdered sugar
  • 1/8 teaspoon almond extract
  • 1/2 teaspoon finely grated lemon zest
  • 12 tablespoons milk or half and half
  • Shredded coconut (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a bowl, whisk together flour, baking powder, salt, and shredded coconut.
  3. In another bowl, mix coconut yogurt, sugar, eggs, lemon zest, lemon juice, melted coconut oil, and almond extract until smooth.
  4. Gradually combine dry ingredients with wet ingredients using a spatula—mix just until combined.
  5. Pour batter into the prepared pan and bake for about 50 minutes or until a toothpick comes out clean.
  6. Let cool for 10 minutes in the pan before transferring to a wire rack to cool completely.
  7. Meanwhile, prepare frosting by mixing softened cream cheese and butter until smooth; gradually add powdered sugar and lemon zest.
  8. Frost the cooled cake and garnish with shredded coconut.
