  • 3 tablespoons olive oil
  • 1 medium sweet Vidalia onion
  • 1 medium zucchini
  • 15-ounce can garbanzo beans
  • 5 ounces fresh spinach
  • 1/2 English cucumber
  • 1 pound cherry tomatoes
  • 6 ounces crumbled feta cheese
  • Juice and zest of one lemon

Instructions

  1. Cook orzo in a large pot according to package directions; drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Sauté diced onion for 3 minutes.
  3. Add zucchini and garbanzo beans; season with salt, pepper, Italian seasoning, and oregano. Cook for another 3 minutes.
  4. Stir in pressed garlic; cook for an additional minute until fragrant.
  5. Combine the sautéed mixture with the orzo in a large bowl.
  6. Fold in fresh spinach until wilted, then add cucumbers, tomatoes, basil, lemon zest, and juice.
  7. Gently mix in crumbled feta cheese.
  8. Taste and adjust seasoning if necessary; drizzle with more olive oil if desired.
