  • 1 box penne pasta
  • 1/2 each of red, yellow, and green bell peppers (diced)
  • 1 tsp minced garlic
  • 4 cups water
  • 1 tbsp salt
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 tbsp all-purpose flour
  • 2 1/2 cups heavy whipping cream
  • 1 cup Mexican-style four cheese
  • 1/2 cup mozzarella cheese
  • 2 tbsp wet jerk seasoning (e.g., Walkerwood)
  • 1 tsp dry jerk seasoning
  • Salt and pepper (to taste)

Instructions

  1. Boil water in a large pot with salt and olive oil.
  2. Add penne pasta and cook according to package instructions. Drain and set aside.
  3. Sauté garlic and diced bell peppers in olive oil until tender.
  4. In the same pot used for the pasta, make a roux by melting butter and whisking in flour. Gradually add heated cream, stirring until thickened.
  5. Mix in sautéed vegetables, cheeses, jerk seasonings, salt, and pepper.
  6. Combine cooked pasta with the sauce until well coated.
