  • 2 1/2 cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon kosher salt
  • 2 sticks (8oz unsalted butter, diced and very cold)
  • 69 tablespoons ice water
  • 1 egg (for egg wash)
  • 1/4 cup raw or turbinado sugar (for sprinkling)
  • 2 large honey crisp apples (peeled and diced small)
  • 3 tablespoons salted butter
  • 2 tablespoons bourbon whiskey
  • 1 teaspoon vanilla bean paste
  • 1/2 teaspoon ground cinnamon
  • 2/3 cup brown sugar
  • 18 oz fresh blackberries
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Make the crust by mixing flour, sugar, and salt in a stand mixer. Add cold butter and mix until crumbly. Gradually add ice water until dough forms.
  2. Chill the dough for at least one hour.
  3. Prepare the apple filling by sautéing diced apples with butter, bourbon, vanilla bean paste, cinnamon, and brown sugar until syrupy.
  4. Roast blackberries on a baking sheet until soft, then simmer with sugar and vanilla until thickened for the blackberry filling.
  5. Roll out the chilled dough and cut into pumpkin shapes using a cookie cutter.
  6. Assemble hand pies by placing filling on cutouts, sealing edges with egg wash and crimping.
  7. Bake at 375°F for 25 minutes or until golden brown.
