  • 2 1/2 lb zucchini
  • 3/4 cup extra-virgin olive oil
  • 1 cup diced sweet onion
  • 1 1/2 tbsp minced fresh garlic
  • Pinch crushed red pepper flakes
  • 1 tsp kosher salt
  • 1 tsp ground black pepper
  • 1 cup heavy cream
  • 3/4 cup finely grated romano cheese
  • 2 tbsp chopped fresh basil
  • 2 tbsp chopped fresh oregano
  • 2 tbsp chopped fresh mint
  • 2 tbsp chopped fresh basil (to finish)
  • 2 tbsp chopped fresh oregano (to finish)
  • 2 tbsp chopped fresh mint (to finish)

Instructions

  1. Cook the pasta in salted boiling water until al dente. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Sauté onion until translucent, then add garlic and red pepper flakes; cook until fragrant.
  3. Add sliced zucchini and season with salt and pepper; cook until tender.
  4. Stir in heavy cream and simmer before adding romano cheese until melted.
  5. Combine the zucchini sauce with cooked pasta; toss gently to coat.
  6. Garnish with fresh herbs before serving warm.
