  • 1 cup sweet and hot salad peppers
  • ¼ pound deli chicken ham (diced)

  • 1 cup pepperoni (diced)
  • ½ pound provolone cheese (diced)
  • 16 ounce bottle Italian dressing
  • 1 cup mayonnaise
  • ¼ cup grated parmesan cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon black pepper
  • Fresh parsley (optional)

Instructions

  1. Cook the tri-colored rotini according to package instructions until al dente. Drain and rinse with cold water.
  2. In a large bowl, combine cooked pasta, cucumber, bell peppers, cherry tomatoes, red onion, spinach, chicken ham, salami, and provolone cheese.
  3. In a medium bowl, whisk together Italian dressing, mayonnaise, and any desired seasonings until well mixed.
  4. Pour the dressing over the pasta mixture and toss gently to combine.
