  • 1/2 medium onion, chopped
  • 34 cloves garlic, minced
  • 1/2 teaspoon crushed red pepper flakes (optional, or more to taste)
  • 1 cup uncooked orzo pasta
  • 2 cups chicken broth
  • 1 cup heavy/whipping cream
  • 1/2 cup freshly grated parmesan
  • 2 cups fresh baby spinach
  • Salt & pepper (to taste)

Instructions

  1. In a soup pot or Dutch oven, brown the sausage over medium-high heat for about 5 minutes.
  2. Add chopped onions and cook until soft, about another 5 minutes.
  3. Stir in garlic and orzo, cooking for an additional 30 seconds.
  4. Pour in chicken broth and cream; bring to a bubble then reduce heat. Cook uncovered for about 10 minutes, stirring frequently.
  5. Remove from heat; stir in parmesan and spinach. Cover for 3-5 minutes until thickened as desired. Season with salt and pepper before serving.
