  • 2 tablespoons canola oil
  • Kosher salt and black pepper
  • 2 yellow onions
  • 4 cups beef or chicken broth
  • 1 can/bottle dark Irish beer (like Guinness)
  • 1 teaspoon dried thyme
  • 4 carrots
  • 1 pound potatoes (gold or your choice)
  • 1 pound sweet potatoes
  • Fresh parsley (optional)

Instructions

  1. Prepare the lamb by trimming excess fat and seasoning with salt and pepper.
  2. In a Dutch oven over medium heat, brown lamb pieces in batches for 2-3 minutes on each side; remove once browned.
  3. Sauté onions in the same pot until softened; deglaze with broth if needed.
  4. Add broth and dark beer along with browned lamb and thyme; bring to a boil, then cover and simmer for about 90 minutes.
  5. Stir in carrots and potatoes; cook for an additional 10–15 minutes before adding sweet potatoes. Cook until all veggies are tender.
  6. For a thicker stew, blend some cooked vegetables with broth before mixing back into the pot.
  7. Adjust seasoning with salt and pepper; garnish with fresh parsley before serving.
