  • 5 slices bacon
  • ½ head cabbage
  • 4 potatoes
  • 1 medium onion
  • ½ cup chicken stock
  • 1 ½ teaspoons thyme
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Mix dry rub ingredients in a bowl; coat chicken evenly.
  3. Cook bacon in a large oven-safe sauté pan until crispy; reserve fat.
  4. Sear seasoned chicken until browned; remove from the pan.
  5. Sauté chopped cabbage in remaining bacon fat until slightly wilted.
  6. Stir in potatoes, onions, and chicken stock; scrape any browned bits from the pan.
  7. Add chopped bacon back into the pan and arrange seared chicken on top.
  8. Bake for 45–50 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
