  • 6 tbsp melted unsalted butter
  • 24 oz cream cheese, softened
  • 1 cup sugar
  • ½ cup packed brown sugar
  • 1¼ cups pumpkin purée
  • 3 large eggs + 1 yolk
  • ¼ cup heavy cream
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp ginger
  • ¼ tsp salt

Instructions

  1. Preheat your oven to 350°F.
  2. In a bowl, mix together the graham cracker crumbs, sugar, and melted butter until well combined.
  3. Press this mixture firmly into the bottom of a springform pan.
  4. Bake in the preheated oven for 8–10 minutes until set. Let it cool.
  5. In another bowl, beat together the softened cream cheese and sugars until fluffy.
  6. Add in the pumpkin purée, eggs (whole plus yolk), heavy cream, vanilla extract, cinnamon, nutmeg, ginger, and salt.
  7. Mix until smooth and well blended.
  8. Pour the filling over the cooled crust in the springform pan.
  9. Bake in the oven for about 55–65 minutes until mostly set but still slightly jiggly in the center.
  10. Allow the cheesecake to cool at room temperature for about 1 hour.
  11. Transfer to the refrigerator and chill for at least 4 hours or overnight for best results.
  12. Carefully remove from the springform pan once chilled.
  13. Slice into pieces and serve with your favorite toppings if desired!
