  • 300 ml whole milk
  • 80 grams sugar
  • 7 grams active dry yeast
  • 500 grams bread flour
  • 1 teaspoon Kosher salt
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • 1 tablespoon orange zest
  • 2 large eggs
  • 70 grams unsalted butter (softened)
  • 140 grams dried currants

Instructions

  1. Heat milk with sugar until dissolved; cool to lukewarm.
  2. Stir in yeast and let it bloom for about 10 minutes.
  3. In a mixer bowl, combine flour, remaining sugar, salt, spices, and zest.
  4. Add the milk mixture, eggs, and butter; mix until dough forms.
  5. Knead for about 3 minutes; rest for another 15 minutes.
  6. Knead in currants; let rise in a warm place for 1–2 hours until doubled.
  7. Shape into buns; let rise again for about 30–60 minutes.
  8. Preheat oven to 375°F and prepare flour paste for crosses.
  9. Pipe crosses onto buns; bake for 20–25 minutes until golden brown.
  10. Glaze with apricot jam after baking; cool slightly before serving.
