  • 240g drained cooked chickpeas
  • 300g Greek yogurt
  • 150g feta cheese
  • 2 tablespoons honey
  • 2 tablespoons rose harissa paste
  • Olive oil
  • Cinnamon
  • Salt
  • Pepper

Instructions

  1. Preheat the oven to 190°C.
  2. Trim carrot tops and place them on a roasting tray. Drizzle with olive oil, cinnamon, salt, and pepper; roast for 30 minutes.
  3. In a pestle and mortar, make a chunky green sauce with chopped carrot tops, lemon juice, and olive oil.
  4. In a mixing bowl, combine Greek yogurt and crumbled feta; whisk until smooth.
  5. Add drained chickpeas to the roasting tray during the last 15 minutes to crisp them up.
  6. Mix honey and harissa paste in a bowl; coat roasted carrots and chickpeas with this mixture.
  7. Serve whipped feta on a plate topped with the roasted mixture and drizzle carrot top oil before serving.
