  • 1 to 1 1/2 lbs boneless skinless chicken breasts (cut into 1-inch pieces)
  • 1 Tbsp arrowroot powder (or cornstarch)
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 Tbsp olive oil (divided)
  • 12 oz green beans (trimmed)
  • 1/4 cup green onions (chopped)
  • Sesame seeds (optional garnish)
  • 1/4 cup chicken broth
  • 3 Tbsp low-sodium soy sauce
  • 1/4 cup honey
  • 4 cloves garlic (minced)
  • 1/2 tsp grated ginger (or 1/4 tsp ground ginger)
  • 2 tsp arrowroot powder (or cornstarch)

Instructions

  1. Cut chicken into 1-inch cubes and toss with arrowroot powder, garlic powder, onion powder, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat and sear the chicken until browned (4-5 minutes). Set aside.
  3. In the same skillet, sauté green beans for about 6 minutes until tender yet crisp.
  4. In a bowl, whisk together chicken broth, soy sauce, honey, garlic, and ginger. Mix arrowroot powder with water until smooth.
  5. Return chicken to the skillet, pour in the sauce and arrowroot mixture. Stir to coat evenly and simmer until thickened.
  6. Serve topped with green onions and sesame seeds over rice or on its own.
