Ingredients

Scale
  • 1.5 lbs boneless skinless chicken thighs
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground black pepper
  • ½ teaspoon salt
  • 1 tablespoon oil
  • 1 cup honey barbecue sauce (your favorite store-bought or homemade)
  • 67 Yukon gold potatoes, thinly sliced
  • 2 tablespoons butter
  • 6 cloves garlic, minced
  • 2 tablespoons flour
  • 2 cups milk
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 ½ cups grated Parmesan cheese
  • ½ cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 400°F (200°C). In a large bowl, season chicken thighs with paprika, onion powder, garlic powder, salt, and pepper. Drizzle with oil and toss to coat. Set aside.
  2. In a medium saucepan, melt butter over medium heat; sauté minced garlic until fragrant. Whisk in flour to create a roux; gradually add milk while whisking until smooth. Stir in garlic powder, onion powder, salt, and cheeses until creamy.
  3. In a greased baking dish, layer sliced potatoes evenly. Pour the creamy sauce over them, ensuring coverage. Nestle chicken thighs on top and brush generously with honey barbecue sauce.
  4. Cover with foil and bake for 40 minutes; uncover and bake an additional 15–20 minutes or until chicken is caramelized and potatoes are tender.
