  • 71/2 ounces thick-sliced bacon (diced)
  • 2 tablespoons unsalted butter
  • 1 tablespoon minced garlic
  • 11/2 cups diced yellow onion
  • 1 cup diced carrots
  • 3 cups diced baby gold potatoes
  • 3 cups whole milk
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. If using fresh corn, cut kernels off the cobs; save cobs for flavor.
  2. Cook diced bacon in a large pot over medium-high heat until crispy. Remove with a slotted spoon and set aside.
  3. In the same pot, melt butter and sauté onions, carrots, and garlic until softened.
  4. Stir in flour, then add potatoes along with chicken broth and bay leaf. Bring to a simmer.
  5. Once simmering, reduce heat and cook covered for 20–25 minutes until potatoes are tender.
  6. Discard bay leaf and corn cobs; stir in corn kernels and heavy cream. Season to taste and heat through.
  7. Serve hot topped with reserved bacon and fresh herbs if desired.
