Ingredients
- 2 large chicken breasts
- 4 medium potatoes, diced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small red onion, cut into wedges
- 4 garlic cloves, minced
- 3 tbsp olive oil
- 1 tsp dried rosemary
- 1 tsp dried thyme
- 1 tsp parsley, chopped
- 1 tsp salt
- black pepper to taste
- paprika to taste
- 1 tbsp butter, melted
Instructions
- Preheat the oven to 220C / 425F. Line a baking tray with parchment paper.
- In a mixing bowl, toss diced potatoes, bell peppers, and onion with 2 tablespoons of olive oil and seasonings. Spread evenly on the baking tray.
- Rub chicken breasts with remaining olive oil, garlic, melted butter, salt, and pepper. Place beside the vegetables on the tray.
- Roast for 30–35 minutes until chicken reaches an internal temperature of 74C / 165F and vegetables are golden brown. Flip the potatoes halfway through cooking.
- Allow chicken to rest for five minutes before slicing. Serve garnished with parsley.
