  • 1 tbsp butter
  • 100g bacon lardons or thick-cut bacon
  • 1 leek
  • 2 carrots
  • 2 stalks celery
  • 2 cloves garlic
  • 2 tbsp flour
  • 1 liter chicken or turkey stock
  • 250g cooked turkey or chicken
  • 2 large potatoes
  • 2 bay leaves
  • 1 tbsp fresh thyme (or 1 tsp dried)
  • Salt and pepper to taste

Instructions

  1. In a Dutch oven, cook the bacon in butter over medium heat until crispy. Drain excess fat, leaving about 2 tbsp.
  2. Add leeks, carrots, celery, and thyme; cook for about 5 minutes. Stir in garlic and cook for another minute.
  3. Add flour, mix well, then gradually pour in the stock while scraping the pot bottom. Bring to a boil and season with salt and pepper.
  4. Incorporate potatoes, turkey, and bay leaves; cover and bake at 180°C (350°F) for about 45 minutes.
  5. If desired, stir in cream before serving and garnish with parsley.
