  • ¼ cup maple syrup
  • ½ cup milk
  • 1 cup grated zucchini
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 and ¾ cups white whole wheat flour
  • 2 teaspoons cinnamon
  • Baking soda
  • Baking powder
  • Salt

Instructions

  1. Preheat your oven to 425°F and line a muffin tin with liners.
  2. Grate zucchini and squeeze out excess moisture using a kitchen towel.
  3. In a bowl, mash bananas and mix with melted butter, Greek yogurt, maple syrup, milk, eggs, and vanilla.
  4. In another bowl, combine flour, cinnamon, baking powder, baking soda, and salt.
  5. Gently fold dry ingredients into the wet mixture until just combined.
  6. Fill muffin cups evenly and bake at 425°F for 5 minutes; then reduce heat to 350°F for an additional 20-22 minutes until a toothpick comes out clean.
  7. Cool on a wire rack before storing.
