Ingredients
- 1–1.5 lbs boneless skinless chicken breast or thighs
- 1/4 tsp salt
- 1 tbsp avocado oil
- 1 red bell pepper
- 1 orange bell pepper
- 1/2 red onion
- 1 cup pineapple chunks
- 1/2 cup Primal Kitchen Foods Hawaiian BBQ Sauce
- Juice of 1 lime
- Cilantro and sesame seeds for garnish
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, season cubed chicken with salt and avocado oil; mix well.
- Add chopped vegetables and Hawaiian BBQ sauce; stir until coated.
- Spread the mixture on the prepared baking sheet and bake for 20 minutes.
- After 20 minutes, add pineapple chunks and return to the oven for an additional 10-20 minutes until chicken reaches an internal temperature of 165°F (74°C).
