- 1 tablespoon unsalted butter

- 1/4 cup Irish whiskey
- 1 1/2 cups Guinness
- 6 cups beef stock
- 1 tablespoon Worcestershire sauce
- Fresh thyme and bay leaf

Instructions
- In a large pot, heat olive oil and butter over medium-low heat. Add sliced onions with a pinch of salt. Cook for about 45 minutes until caramelized.
- Stir in minced garlic and cook for 30 seconds. Increase heat to medium-high, add whiskey, and scrape the bottom of the pan.
- Pour in Guinness and simmer until reduced by half.
- Add beef stock, Worcestershire sauce, thyme, bay leaf, salt, and pepper; bring to a boil.
- Reduce heat to simmer for 30 minutes; remove bay leaf and thyme stems before adjusting seasonings.
