  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 3 large onions (peeled and thinly sliced)
  • Salt and pepper (to taste)
  • 2 garlic cloves (minced)
  • 1/4 cup Irish whiskey
  • 1 1/2 cups Guinness
  • 6 cups beef stock
  • 1 tablespoon Worcestershire sauce
  • Fresh thyme and bay leaf
  • Baguette and shredded Irish cheese for topping

Instructions

  1. In a large pot, heat olive oil and butter over medium-low heat. Add sliced onions with a pinch of salt. Cook for about 45 minutes until caramelized.
  2. Stir in minced garlic and cook for 30 seconds. Increase heat to medium-high, add whiskey, and scrape the bottom of the pan.
  3. Pour in Guinness and simmer until reduced by half.
  4. Add beef stock, Worcestershire sauce, thyme, bay leaf, salt, and pepper; bring to a boil.
  5. Reduce heat to simmer for 30 minutes; remove bay leaf and thyme stems before adjusting seasonings.
  6. Toast baguette slices under the broiler until golden brown.
  7. Serve soup in bowls topped with toasted bread and shredded cheese; broil until cheese is melted.
  8. Garnish with fresh parsley or chives if desired.
