  • 11/4 cups all-purpose flour
  • 1/2 cup cold salted butter
  • 1/3 cup sour cream
  • 2 pounds beef brisket or chuck roast
  • 8 ounces mushrooms
  • 4 medium carrots
  • 1 large onion
  • 2 cups beef broth
  • 11 ounces stout beer (Guinness)

Instructions

  1. Make the pie crust by combining flour and cold butter until crumbly; stir in sour cream. Chill for at least 30 minutes.
  2. In a cast iron skillet, brown the beef in batches and set aside.
  3. Sauté onions, carrots, and mushrooms until softened; add garlic and cook until fragrant.
  4. Sprinkle flour over vegetables; stir in tomato paste, thyme, salt, pepper, beef broth, Guinness, and sugar. Simmer and return browned beef to skillet for about 2 hours.
  5. Preheat oven to 400°F (200°C). Roll out one disc of dough to fit your baking dish, fill with beef mixture, cover with dough, seal edges, and cut slits for steam.
  6. Brush with egg wash and bake for 30–35 minutes until golden brown.
